6-8 Slices chorizo
1-2 Tbsp (15 – 30 ml) olive oil
1 Small red onion, cut into petals
½ Cup (125 ml) cherry tomatoes, quartered
1 Disc feta, crumbled
Salt and milled pepper
Fry chorizo in olive oil for about a minute, add onion, fry for a minute or two and then toss through tomatoes.
Crack eggs over the top, scatter with feta, season, drizzle with olive oil and pop into a 200C oven for about 8 – 10 minutes, until the whites are set but yolks are still runny.
Serve with fresh basil.
