Olive oil for frying
1 Large leek, finely sliced
200g Smoked snoek, flaked
2 Tbsp (30ml) fresh chives, chopped finely
1/4 Cup (60ml) cream
Salt and milled pepper
Heat olive oil and fry leek until soft.
Mix snoek, chives, cream and seasoning together.
Stir through leeks and toss gently.
Spoon into an oven-to-table dish and crack eggs on top.
Bake in a 200C oven for about 8 -10 minutes, until the whites are set but yolks are still runny.
