Snoek – with its delicious, distinctive taste – is found in the seas of the Southern Hemisphere.

It is a staple of subsistence fishing communities around the Western Cape.

Here’s how to jazz up the old faithful snoek:

Ingredients:

  • Olive oil for frying

  • 1 Large leek, finely sliced

  • 200g Smoked snoek, flaked

  • 2 Tbsp (30ml) fresh chives, chopped finely

  • 1/4 Cup (60ml) cream

  • Salt and milled pepper

  • 4 Eggs

Method:

  • Heat olive oil and fry leek until soft.

  • Mix snoek, chives, cream and seasoning together.

  • Stir through leeks and toss gently.

  • Spoon into an oven-to-table dish and crack eggs on top.

  • Bake in a 200C oven for about 8 -10 minutes, until the whites are set but yolks are still runny.

  • Serve immediately.
