How to make a deliciously simple creamy egg curry

Eggs are nutritious, yet simple and very tasty.

Here’s a deliciously creamy and dreamy way to prepare them…

Ingredients:

  • Canola oil

  • 2 Onions, chopped

  • 4 Cloves garlic, chopped

  • 5cm Knob ginger, chopped finely

  • 1 Chilli, deseeded and chopped finely

  • 1 Tbsp (15ml) coriander seeds

  • 1 Tbsp (15ml) cumin seeds

  • 1 Tsp (5ml) turmeric

  • 1/2 Cup (125ml) tomato puree

  • 1/2 Cup (125ml) cream

  • Pinch sugar

  • 1 – 2 Tsp (5 - 10ml) garam masala

  • 8 Eggs, boiled and peeled

  • Fresh coriander

  • Salt and milled pepper

Method:

  • Toast coriander and cumin seeds, grind in a mortar and pestle and set aside.

  • Heat oil in a pan and sauté onion, garlic, ginger and chilli.

  • Add turmeric and ground spices. Fry for a minute or two.

  • Stir in tomato puree and cream and add a pinch of sugar.

  • Simmer for about 3 minutes.

  • Add garam masala and eggs, cover and cook to heat eggs through, about 3 – 5 minute. Season with salt and pepper.

  • Serve with fresh coriander.
