The Science Of ...

All you wanted to know about food trucks (without having to ask a foodie!)

A food truck is, in its most basic form, a large vehicle (e.g. a Kombi) equipped to cook and/or sell food.

Demand from foodies and hipster alike have, in recent years, caused an explosion in the popularity of food trucks, particularly those offering gourmet cuisine or specialty dishes.

We interviewed (scroll down to listen to the audio) Luca Castiglione of Cape Town Food Trucks and Trevor Wittles of Shawarma Express about the science of food strucks.

About Cape Town Food Trucks

CTFT has 40 gourmet food trucks and creates events centred around them.

Shawarma Express

Luca Castiglione sees himself as The Godfather of Food Trucks in South Africa.

702/CapeTalk presenter Mike Wills

They’ve been doing it in Europe for decades, but what we have here now is an elevated experience.

Trevor Wittles (Shawarma Express)

You go to where the people are. It makes for a good business.

Trevor Wittles (Shawarma Express)

In Adelaide you can pull up with a food truck in any parking lot. We don’t have these generic licenses yet. In South Africa we mainly trade at events.

Trevor Wittles (Shawarma Express)

Food trucks will set you back anything from R300 000 to R1-million; much cheaper than a restaurant!

Luca Castiglione (Cape Town Food Trucks)

There are food trucks that do weddings and five-star catering.

Trevor Wittles (Shawarma Express)

We’re being chased away by police and security like we are criminals.

Johannesburg food truck owner discussing the issues he faces

We have a factory in Cape Town where we build food trucks everyday.

Luca Castiglione (Cape Town Food Trucks)

Cape Town is a design city. People here eat with their eyes; you need a beautiful truck.

Luca Castiglione (Cape Town Food Trucks)

You don’t have the overheads running a food truck like with a restaurant.
