All you wanted to know about food trucks (without having to ask a foodie!)

A food truck is, in its most basic form, a large vehicle (e.g. a Kombi) equipped to cook and/or sell food.

Demand from foodies and hipster alike have, in recent years, caused an explosion in the popularity of food trucks, particularly those offering gourmet cuisine or specialty dishes.

We interviewed (scroll down to listen to the audio) Luca Castiglione of Cape Town Food Trucks and Trevor Wittles of Shawarma Express about the science of food strucks.
