It is always nice to impress your guests. You can do it with a very tidy home, or beautiful decor, but our favourite way of impressing dinner party guests is with exquisite starters and canapés. Try these goats cheese ricotta puffs with honey and herbs to raise some eyebrows:
200g Goats cheese, crumbled
2 Tbsp (30ml) sugar
Finely grated rind of 1 lemon
3/4 cup (180ml) cake flour
2 Tsp (10ml) baking powder
Sunflower oil for frying
3 Tbsp (45ml) honey
Juice of a lemon
2 Tsp (10ml) fresh thyme leaves
Mix goats cheese, parmesan, eggs, sugar and lemon until well combined.
In a separate bowl, whisk flour, baking powder, and salt together.
Fold the dry ingredients gently into the cheese mixture until just combined.
Heat oil to 170C or until it bubbles when you drop a small piece of batter into it.
Fry heaped teaspoonful of the batter, turning once or twice, until golden. Drain on paper towel.
Mix honey, lemon juice and thyme and drizzle over the puffs, crack over some pepper and serve immediately.
