The Naked Scientist, Chris Smith explains what is behind the brain's activity while you are in the grip of a dream and how your consciousness stores certain experiences.

When we dream it may well have some kind of consolidation role where information you have taken in during the day is processed, locked together, stitched into place in the brain if you like, and things which are noisy, irrelevant connections are removed.

He also explains why you are likely to sleeptalk during a dream.

The same way as you are experiencing vivid pictures in your mind, because the same parts of your brain decode visual and other experiences during the day become active at night, you experience visual pictures you want to respond to....a lot of those responses especially the motor responses are suppressed but are not completely suppressed.....
