Khayelitsha Cookies' novel alternative to egg shortage amid bird flu

The business had to find other ways to survive the shortage of eggs in Cape Town and continue baking delicious cookies.

The Avian Flu that has hit the Western Cape has resulted in a large shortage of chicken eggs.

The outbreak that has led to over 2.5 million chicken and ducks dying or being culled - the majority being egg-laying birds.

A township-based baking business, Khayelitsha Cookies had to find other ways to supplement their egg supply.

Managing Director of Khayelitsha Cookies, Adri Williams says they have resorted to using quail eggs in their baking replacing chicken eggs.

She says quail eggs are more resistant to bird flu than chicken eggs and they are nutritional.

Quail eggs are nutritional and have a lot of vitamins in it and it also got a lot more health benefits. It has good cholesterol and amino acid blocks that assist your body deal with anaemia.

The business employs close to one hundred women in its Maitland factory and feeds over 400 children every night.

We employ ladies that are not in a position to get jobs, they can't read, can't write and don't speak English. We teach them how to hand bake and that's the real impact in job creation.
