Local restaurant is changing the game with rustic food

If rustic food is the new trend then we want in! #WeekendBreakfast host Aubrey chats to Chef James Diack, owner of Il Contadino about his fourth eatery and the reason it's changing the food game.

The name Il Contadino means the farmer and since we opened it 5 years ago, myself and my mother have been working tirelessly to make sure that all the food that we do serve, comes as much as possible off our farm.

James jokingly states that his wife says his fourth eatery should be called ‘Divorce’ or ‘The Singles Club’ - he decided to opt for Il Contadino, which embodies the spirit of season-focused, farm-to-table style.

Opened in October 2017, Il Contadino is nestled in the heart of Parktown North and serves farm-inspired meals. Dishes are fresh, simple and rustic - with most of the ingredients sourced from his family’s farm in the Magaliesburg. I want you to walk out and think about the taste of the food, not about how pretty the plate was says the chef.

I’ve learnt that there’s beauty in simplicity.

All four of James’ restaurants offer something different: Coobs is more of a refined, elegant and cultured dining experience, The National has a neighbourhood dining away from home feel, Il Contandino is the perfect pick me up spot for coffee, a light lunch or even after-work drinks, and The Federal is his take on a New York-style diner.

I try and keep my restaurants almost as close together as possible because I do have a hand in the kitchen at every restaurant every day. It’s where I guarantee that you are getting what I produce and we are super proud of it.

Chef James states that he thinks most chefs have a paralysis by analysis attitude towards their plating.

Guys overwork the plate and I think what we try to produce throughout my group, is honesty of food and honesty of ingredient.
