Naked Scientist: How does rice remove moisture from a cellphone?

Ever wondered why you should place your phone in a bowl rice if you have dropped it in a pool of water?

Chris Smith explains the science behind it.

Rice is carbohydrates, it's starch and the starch molecules can soak up a huge amount of water so I suspect by putting your phone in a jar of dry rice, the rice carbs pull the water out of the air around each rice particle.

If your phone has got a lot of water that it can give away, then if you make the air around it very dry then this helps to attract the moisture out of your phone and dry it out more rapidly perhaps than if you were to put it on a table top.
